Other than the obvious sugar free food stuffs what are the best, healthiest foods for a diabetic to eat without effecting their blood sugar too much?

Wholegrain, nothing "white". So brown rice, not white rice, brown bread, not the dyed kind though, wholegrain pasta or even the pulse pasta (which i call protein pasta).

Old grains are also better, but the modern varieties from what I understand. Anything that takes longer to digest so that the carbs are released more slowly.

Guava, bitter melon, I love fish and seafood of all kinds. I’m a low carb person. I get my carbs from vegetables. Not only that for years I love to bake, a batch of cookies ever week. I’m surprised that I don’t have any problem. My A1C this year is excellent even for my age, I eat food without a lot of restrictions.
Edit to add, I bake cookies for my husband, he has a sweet tooth, but he’s not diabetic either.
