Foods you used to dislike but now enjoy

I remember my MIL served bread sauce and cloves to me when I first met my husband’s family. I need to bring this dish back because I’ve read cloves are good for you.
I now eat my medicine, didn’t like bitter melon in my youth, this year I have been eating bitter melon more frequently, my A1C remains very low.

Some ingredients are great in combination with, but terrible on their own.
Now if I just culd come up with a sample ..

generally I don't like cloves, but some dishes just need them.
Same for cinnamon
I think cloves are great, in all spice. Cloves, like cumin, can be very overpowering. You need less than you think you do, and you can quickly ruin a dish by overseasoning with either of them. One application that I like allspice in is some kind of hot cider for the holidays. Like an apple cider base, simmered with allspice, orange juice, orange peel, nutmeg, and a synonym stick. Complete with a weird mug to drink it in and wearing a stupid-looking sweater.
 
For me, growing up pretty much anything my ex-step-father cooked we disliked. He and his mother murdered so many vegetables and meals that it's amazing we actually survived. My brother still hates most vegetables as a result. Luckily we loved burnt cheese!

Me, I had the advantage of my Grannie's cooking which whilst restricted to common UK or Welsh vegetables, was actually excellent.

So several big ones spring to mind are aubergine and courgettes which I love now.

Lentils are another that my e-s-f killed routinely and I love those now as well.

Meat and fish, nope, still hate those. Even the smell of fish cooking still has me gagging.
 
I’m sure there must be some things, but I really can’t think of any.

We had a lot of variety within our region/culture, and I liked, or at least ate, all that stuff (lots of pork, chicken, and beef, lots of fresh vegetables, lots of fruit pies).

As I grew up and moved away, I found a lot of other things that I didn’t grow up with (salami, beer, cheeses other than Colby or American, for example) that I loved, but that’s not the same thing. I never disliked those things because I’d never had them growing up.
