I use trassi in Indonesian cooking, which I do think meets the definition of funky. It's fermented shrimp paste, so it has a very particular smell. I love it, but that's because I associate it with great food and I've known that smell all my life. It's not for everyone however.

I think i've told this before, this one time a friend of mine is visiting and before I can do anything, he's opening all jars etc and sniffing the content
