Game and other wild animals

I've had goose, duck, pheasant, bear, elk, bison, white-tailed deer, and small game. Years ago, I flew javelina meat home after a bowhunting trip in Texas, but my power went out and I lost everything in the freezer before I could try it. A few weeks ago, I pressure canned the last of last year's deer into venison stew. I struck out hunting deer in rifle season this year, but hope I can shoot one in our late flintlock season. We've used up the last half-cow we bought, too, so at the moment I have almost no red meat in the freezer.

I wouldn't mind trying horse meat some time, but I just have never seen it. My grandfather was in WWII and said it was common in France and Belgium.
