Garlic sauce

A fave around here with a steak, just taken three porterhouse steaks out.
So I made another batch of garlic sauce, 500mls home made tomato sauce, about 30 cloves garlic, 1 tablespoon mustard powder, white pepper and a bit of sugar. Sides will be.... Undecided yet, prolly jacket potato.??

What do you do with the garlic? Do you cook it before adding to the tomato sauce?
Every year I get given about 4 plaits of garlic from a friend who grows it. I freeze it straight away.
Note 1 : if frozen it Won't go off within a week in garlic butter. It will keep for 6 to 8 weeks.

So I let it thaw, then peel, then smash with knife and chop. Add to sauce and boil for 5 mins.
Note 2: I freeze what is left over, there's enough for about 3 or 4 meals. I just cut enough up to use, then refreeze.
