Recipe Grilled Apricots with Cheddar

Serve 2, Preparation 5 mins, Cooking less than 10 mins

  • 4 apricots, halved and pitted
  • slices of red cheddar, to taste
  • a couple of thyme sprigs
  • a drizzle of Acacia honey (or maple syrup)

Method

Heat a griddle pan until very hot.

Cook the apricots with thyme sprigs until for about 5 mins or until apricots are soft yet nicely firm.

Top each apricot half with a small slice of cheddar and let it melt. Add some acacia honey and serve.
 
Very interesting! You seem to have a knack for combining sweet and savory in recipes. 👩‍🍳 It seems similar to the idea of a cheddar-and-apple pie.

It’s because I really like to eat sweet and savoury tastes combined together and the combo fruit-cheese is one of my faves

About this recipe, I have experimented as I struggle to find a decent Cheddar (or at least not as good as those ones you have available in US and UK, which for instance I ate many times in London and oh wonderful!), and I haven’t much chances to cook with it. However this one I found here is nice, I like it, so I thought “ok you, time to experiment ” and I am happy with it 🙂
