Have you ever made your own Lemon Extract?

Have any of you ever tried making your own lemon extract yet?

I'm seriously considering it, seeing that it is just too expensive for just one little bottle of the stuff!!

All you need to do it with is just vodka & lemon skins without the pith (the white part that's immediately under the skin), as little as possible. Let the vodka and skins steep for several weeks and you'll have homemade lemon extract!!

Here's what it looks like. It may turn yellow over time, but that's alright!

I have never bothered to make lemon extract. I would just add more lemon zest to whatever I was making. Sorry, but I could think of far better things to do with the vodka
