If you buy ready made food bars from a health food shop where the main ingredients are dates, fruit and nuts, this is a yummy home-made alternative.
3/4 cup wholewheat sifted flour
1/3 cup butter
2 eggs, beaten
1 cup brown sugar
1 cup chopped dates or 3/4 cup coconut ... or a combination is also great
1 1/12 cups chopped nuts (your choice)
1/8 tsp baking powder
1/2 tsp vanilla ( I use more than that as I love vanilla) Do not use the imitation - only real vanilla extract
1/2 tsp grated lemon rind
2 tbsp lemon juice
3/4 cup powdered sugar or non-instant powdered milk
Mix flour and butter like a pastry and sprinkle in bottom of small baking pan.
Bake 350 degrees F for 10 minutes.
Beat eggs, add brown sugar, chopped dates, baking powder and vanilla.
Spread over dry mixture and bake 20 minutes more.
Glaze with rind, juice and powdered sugar while hot.
Let cool and cut into squares.
PS ... I buy my pure vanilla extract from Sams Club for around $7 a large bottle (10 fl ounces) instead of the local supermarket which is about $3.50 for around 4 tbsp! Exactly the same product ...
