Help! What is this in cooked chicken breast

Hi guys,

Hope you can help - I sometimes find almosat opaque possibly jelly like substance within cooked chicken breast - either in breaded chicken or flavoured chicken fillet. I've attached a pic (I know it's pork but similar to what I sometimes find) It can sometimes put me off - is it gelatin or
aspic, or simply fat that's not be trimmed off?

I think it must be tendon. Its possible to remove it before cooking. Here it is uncooked. Its not really like jelly though - its a tough sinew. But it does become slightly translucent when cooked.
