I've had this Wilton brand cookie pan for years.

It makes uber cute cookies for gifts. They're fun to decorate.

Here's my problem that I'm looking for help with:

EVERY time I get these air pockets, holes on the decorative side ONLY!
I know it doesn't seem like a big thing, but I feel it's taking away from the
overall appearance of the cookie.
I'm pressing the semi-firm dough into the pan with both my fingers
and the back of a metal measuring cup really well.
WHAT AM I DOING WRONG?

Just a guess, but after you fill it, are you giving it a few good slams on the countertop to knock the air bubbles out?

NO!
Excellent idea TastyReuben I hadn't thought of that, I do that with my cakes ... but ... this a semi-firm dough and not a batter.
What do you think?
 
Can't hurt. I make a French apple cake that's a very thick batter, nearly a cookie dough, and I smack that down, just out of habit.
Okay then, will do!
I'm probably going to make another round (each recipe makes 2 giant gingerbread boys).
 
from the realm of stranger things . . .

do you soften the butter to room temp before mixing?

butter has a percentage of water - if you have mini-chunkettes of butter in the mix, as the temp rises the water turns to steam and makes bubbles . . .
a trick I picked up from 'the perfect bundt cake' journey.....
 
Have you tried looking at the Wilton discussion boards to see if there is an answer for the problem? They were quite helpful to me when i was trying a new cake decorating technique in the past.
