  • Chicken breasts or thighs: 1 kg
  • Onions: 2 large, finely grated
  • Greek yogurt: 1 cup
  • Lemon juice: 3 tablespoons
  • Saffron: A pinch, dissolved in 2 tablespoons of hot water
  • Olive oil: 2 tablespoons
  • Garlic: 3 cloves, minced
  • Salt: to taste
  • Black pepper: 1 teaspoon
  • Turmeric: 1/2 teaspoon
  • Sumac: 1 teaspoon (optional, for garnish)


  1. Marinate the Chicken: In a large bowl, combine grated onions, Greek yogurt, lemon juice, saffron water, olive oil, minced garlic, salt, pepper, and turmeric. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Preheat Grill or Oven: If using a grill, preheat it to medium-high heat. If using an oven, preheat it to 200°C (around 400°F).
