HONEY-GLAZED ALMONDS
Makes 10 servings
Ingredients
1-1/2 cups raw, unblanched almonds
1 TBsp sugar
1-1/2 TBsp honey
1/2 tsp ground chipotle chile powder
1/4 tsp ground cumin
1/4 tsp salt
Directions
1. Line a large baking sheet with parchment paper.
2. Place almonds in a medium nonstick skillet; toast over medium heat 6-8 minutes or until lightly toasted, shaking the pan frequently. Combine remaining ingredients in a 2-cup glass measure, stir to mix, and microwave on high for 30 seconds. Add honey mixture to pan and cook 2 minutes, stirring constantly to coat almonds. Arrange almond mixture on prepared baking sheet in a single layer and let stand 10 minutes. Break apart any clusters. Store in an airtight container for up to 3 days.

These are quite nice, though much more on the sweet side than the spicy side. We eat a lot of candied nuts around Christmas, so I'll be making these again then.
