Recipe Hot apple pickle

Herbie am I missing something or have I mis-understood - there doesn't seem to be a cooking time for the apples? Asking because I am poised to have a go at this recipe! :)

Maybe this is the point. The matchstick apple pieces stay crunchy in the pickle mix. That is how I originally read it.
 
Hi epicuric I'm pleased you are giving this a go. As Morning Glory says, tge apple does not need cooking as such. The hot oil softens the apple a bit, but not so it's soft like you would want for a chutney. You want the matchsticks with form.
