How Do You Make Sidewinder Fries?

Last December I went to Motorpoint Arena in Nottingham to see comedian Peter Kay live (which was amazing) and we had the deluxe package that included a 'fancy' meal in the Green Room. The meal consisted of 4 of the most tender and delicious slider burgers we had ever tasted along with some of the most incredible Sidewinder Fries!

I have a deep fryer at home so I would love to make some sidewinder fries but I'm not too sure exactly how you make/cut them as there's not much information about them on the internet, people are saying to use a Spiralizer to cut the sidewinder fries but from the spiralizers I've seen, they slice up the vegetables a bit too thinly than what would be required for sidewinder fries.

Let me see if I can find a photo of said fries..

The ones we had in Nottingham were the fluffiest, ever so slight crispy fries we had ever tried so I would love to recreate them.

Has anyone made Sidewinder fries, if so what do you use to cut the potatoes and do you have any photos of you making them?
 
Our spiralizer has 3 different blade widths. However, it is a KitchenAid mixer attachment and, even though it is an aftermarket part, was still fairly pricey.
 
Sidewinder Fries are a manufactured frozen potato product made under licence from Simplot of the US by Koffman in the UK
I've looked in Asda, Sainsburys, Lidl, Aldi, Tesco, Sainsburys, Iceland, Morrisons, Waitrose, Farmfoods and my local corner shop and not seen any which is why I'm asking how people make them as they cannot be found in any UK Supermarket right now.
 
I'm going to try making those soon enough. I'm thinking:
  1. Spiral cut (1/4" thick)
  2. Cut to length
  3. Soak in cold water 2 hours
  4. Dry them off
  5. Fry

I'm hoping to try soon too but (for a change) I seem to have a busy social life all of a sudden so not had the time to give it a go so it'll be a race to see who tries them out first!
 
I just tried that spiral slicing on a full sized Russet potato and came out with more like potato discs... There wasn't any fanning it out going on either. After rewatching the video I see that the potatos being used are considerably smaller than a Russet baking potato. I'll try again after I get some red baby new potatoes since those are typically smaller than Russet potatoes.
