At that color, you can also slice them very thin on a mandolin, think not super thin potato chip thin, but not much thicker either, fry, and serve with mojo as a dip. The place we first had them like that sliced lengthwise, but I've also sliced on a sharp bias. They served them instead of bread for the table.
