I'm looking for great gluten free cookie recipes

I learned to bake using all the traditional ingredients and have had reasonable success. I have a number of friends who want to be gluten free as they are on no/low carb diets but they still have a sweet tooth. One of the things that most of them want are cookies. I have tried a few recipes that have worked out "OK" but I am looking for the best recipes around. Got one?
 
I am not sure what you have already tried, it would be good to know so we do not repeat just what you've already tried.

One of my favorites this time of year, which is not really a cookie in the traditional sense, its a Christmas cookie/cake from Northern Europe and there are many different recipes.

You need Coconut shavings , a bit of sweet stevia ,sugar , egg-whites, a bit of maizenna or potato starch.

An old recipe:
2 whole eggs
250 gram Coconut
250 gram of sugar
Combine the sugar and eggs, stir inn the sugar and spoon onto a baking sheet.
200-225 Celcius and 10-12 minutes until the cakes are golden brown.
After finished, cool down and then dip in melted dark chocolate and leave to cool.

If you like to use less sugar here is an alternative:
4-5 egg whites
200-280 gram coconut
2 table spoons of sugar or alternative sweet
1 ts of maizenna or potatostarch

Combine the eggs and sugar and starch with a whisk ,add the coconut .
Spoon onto a greased baking sheet, or dusted with almond flour .
ca 225 C for 10-12 minutes .
