Is white bread bad for you?

I don’t eat a lot of bread, rice, or pasta. But when I do eat bread, it’s baguette from Costco. I personally like to chew my food, lose interesting when something is very soft. I also make my pasta el dente, I cook my vegetables similarly.
But off topic comment, my daughter was gluten free in USA, then she did a gap year in UK, the bread in UK must have cured her, she just came back recently and being eating bread here again. One thing that makes my life much easier when prepping for Thanksgiving.
I like my bread chewy as well. I make it more than I buy it and just about always add gluten to boost the chewy.

Have you tried sourdough?
I'm sure you would love the whole process of it (although you can't speed it up in the pressure cooker)

Yes, I've tried getting that sour flavor for years now and it doesn't. Earlier, this past summer, you mentioned the starter temp being higher and I put it outside, no change. If I want sour tasting bread I have to add citric acid. 🤷‍♂️

It is a bit subtle, but there is a temp differnce..
Mainly, I don't find my sourdough sour, but just much nicer in consitency/texture than other bread.
And easier in timing, even though it takes longer. It doesnt collapse
 
I made a sourdough bread once, it’s very good, but then I travelled for a long time, like over a month, and my starter die. I have been too lazy to get another one going.

I have heard of people that can handle sourdough even though they need to eat GF...
I heard that too some years back when when I first got into some serious sourdough baking and it was becoming a topic, but it's not gluten free and seems to be more about relative digestability. The BBC article and ZOE podcast links on thread#12 probably sum it up pretty well.
 
Surprising how long starters can survive. I've sometimes gone months without refreshing and only completely lost one once - but very easy to start scratch in any case
Yes, I only lost one so far when I moved back here, GA., from NV. It was a week long drive and half of it through the sweltering desert. This one is still good; I'll be using it to make my sister's ground from berries rye bread this Christmas. 👍
