I like my bread chewy as well. I make it more than I buy it and just about always add gluten to boost the chewy.I don’t eat a lot of bread, rice, or pasta. But when I do eat bread, it’s baguette from Costco. I personally like to chew my food, lose interesting when something is very soft. I also make my pasta el dente, I cook my vegetables similarly.
But off topic comment, my daughter was gluten free in USA, then she did a gap year in UK, the bread in UK must have cured her, she just came back recently and being eating bread here again. One thing that makes my life much easier when prepping for Thanksgiving.
