Just Tried Menage à Trois White Wine

My dear MIL brought this over for Thanksgiving dinner, but there are very few wine drinkers in our house—I ended up opening a bottle of red, and we overlooked this wine.

Today, my husband opened it up to use in a bolognese sauce, so we drank the remainder of the bottle with dinner. It was actually really good—I am not always a fan of white wine, and it is so great to be able to cook with something, and actually enjoy drinking it afterwards.

How do you handle wine when you need to sacrifice a bottle for something you're cooking?
 
I freezer any leftovers in ice cube trays and save them for the next time I'm cooking something which needs wine. I can't bear to open a bottle for the express purpose of cooking - especially if I don't really fancy a drink that night, but I do love cooking with wine.

I just take as many cubes as I need out of the freezer and drop them in the pan where they melt immediately.
