Grilled Lamb Sweetbreads - Turkish Sweetbread Kebabs

Ingredients:
  • 500 g lamb sweetbreads
  • 2 tsp cumin
  • 2 tsp chili flakes
  • 2 tsp paprika powder
  • 1 tsp dried thyme
  • 1 cup yogurt
  • 3 tbsp olive oil
  • 2 tsp salt
  • Roasted tomatoes and lavash to serve
Instructions:
  1. Trim the hard tissues, wash and rinse the sweetbreads and pat dry
  2. Cut the sweetbread into small cubes
  3. Add cumin, paprika, chili flakes and thyme into a bowl
  4. Mix with yogurt and oil to prepare the marinade
  5. Add the sweetbreads into the bowl, mix to combine
  6. Cover and let it rest in the fridge for at least 3 hours
  7. Thread the marinated sweetbreads onto the skewers
  8. Prepare the BBQ on medium fire
  9. Grill the sweetbreads brown and nicely charred, rotating occassionally to grill evenly
  10. Serve with lavash, add more spices (cumin, chili flakes) and salt to taste
