I make Rajasthani lime pickle, Punjabi lime pickle and sweet lime pickle.

Have you posted any recipes for these? I love lime pickle but have not successfully made any!

I've just added a bit more vinegar, sugar and oil to the pickle.
I'm keeping track of the amounts and if it works, I'll post the recipe.
It's starting to smell good

...and I was right; I haven't posted any. I searched my files and couldn't find any pictures, either, but I'll post the recipe for my favourite Rajasthani version, and find some pictures next week when I make some more.

I made some lime pickle today, so I've added the photos of how I prepare it in the recipe: Hot Lime Pickle
I only made half the recipe (ie. 6 limes) but that was enough to fill 4 230cc jars. Here they are on the wall behind the kitchen, soaking up the sun:

You can quite happily make it with lemons. Seeds and all - no big deal.
Lime trees typically produce fruit when they're about 7-10 years.

My lime trees started producing in 4 years
My pickle has been standing in the sun for long enough, so taste test today..
Which straight away solves the early morning question of "what shall I eat today?"
Something Indian spiced is the answer

I couldn't resist and tasted the pickle.
I'm pretty happy.
Of course I'll tweak for my next batch

I added a bit of extra lime juice when transferring to smaller jars.
This stuff is addictive!

Incredible, isn't it?
There was a very popular song here back in the 60s/70s which went:
"Lemon tree very pretty,
And the lemon flower is sweet,
But the fruit of the poor lemon
Is impossible to eat"

They'd obviously never tried lemon/lime pickle.

MrsT will eat lemon slices like other people eat oranges. Just over this last break, one of the places we ate brought a bowl of lemon slices to go with the water and iced tea we ordered…and she ate all the lemon slices!

My niece also eats lemons like that as well.
