Liquid to charcoal in no time flat.
I have only tried making candy a couple of times. I have a candy thermometer and a fairly sturdy pot to make it in. This is one thing I can't seem to get right. I do it according to the recipes but as soon as the temperature begins to creep up, I've lost it. Removing it from the heat doesn't seem to work well. It isn't always a disaster, but not exactly what I was aiming for.
The only thing I can think of is that I am making too small a quantity so it rises in temperature too rapidly. Has anyone here had any experience with this? Any suggestions?
