Another delicious chutney recipe, but the main attraction for this one is mango; my favorite fruit!
1 large unripe mango, peeled and finely grated
1/4 teaspoon minced hot pepper
1/2 teaspoon sea salt
1/2 teaspoon black pepper
3 finely chopped or minced garlic cloves
1 tablespoon olive oil
1/2 teaspoon unrefined cane sugar
In a bowl, mix all ingredients together. Transfer mixture to a glass jar and refrigerate. This chutney should be used within 4 days of making it as long as it is kept in the refrigerator.
