MSG: is it a gourmet seasoning?

I use MSG often. It's in my all-purpose house seasoning blend that I make up.

It's a standard on my spice wheel and I get the 464g bag. Like msmofet it goes in just about everything that isn't sweet.

I hate the stuff. Maybe I am a super taster or something, but I can detect it in anything. In my opinion, It takes over the natural taste of the food you are cooking and often the whole dish. It's also addictive as it gives that immediate umami hit. So the first taste of any dish containing it will set off the umami receptors. It's a bit like sugar in that respect.

Whether it's bad for you or not is another question.
 
MSG is the bugaboo ingredient that is used in a lot of Chinese food that a lot of people claim triggers headaches and other symptoms. Quite a controversial subject for many years. I will say from personal experience that consuming foods containing it does cause a headache in me, though whether or not it is the MSG as the cause or something else is not sure.

Righto, I have always broken out in a rash and gotten short of breath when I consumed foods that might have had MSG in it. Small amounts are not too bad (like in Dale's steak marinade), but years ago when I lived in Florida there were a few Chinese takeout restaurants that I was pretty sure were using quite a bit of it. My then boyfriend and I both had the same reaction when we ate from those places, so reasonably sure that's what it was.

I use a shake or two, depends on what's in the pot.

I use Dale's steak marinade in burgers and of course to marinade steaks, and it's on the ingredient list. It doesn't bother me. I suspect the cooks at the Chinese places were rather heavy handed for us to get short of breath and flushed. My boyfriend didn't get the rash like I did, I actually broke out in hives.
 
High glutamate foods (measured in mg/per 100gms):
Anchovies (630), Parmesan (1680), Roquefort (1280), dried shiitake (1060), walnuts (658), sundried tomatoes (650-1100), soy sauce (1264).
All the things we love!
