I love my sauces so l'm going to share this one with you:)

1/2lb butter (unsalted)
4 pimento berries
2 tablespoons of lime juice
A pinch of salt
Freshly ground black pepper
2 spring onions finely chopped
1/2 teaspoon curry powder

Place the butter into a bowl and cream the butter with a wooden spoon, crush the pimento berries and add to the butter mixture along with freshly ground black pepper, garlic (chopped finely), lime juice, salt, onions and curry powder. Mix well until the ingredients are blended into the butter. Place the butter mixture onto a large sheet of foil and freeze until required.
This sauce can be served with grilled fish or steak, simply cut slices from frozen block and place directly onto the hot stsak ir fish.
