Recipe My Favorite Guacamole

Ingredients
2 small or 1 large ripe avocado
1/2 cup finely chopped onion
1 large clove garlic, mined fine
1 pickled jalapeno, seeded, minced fine
1/2 or so small tomato, peeled, seeded, chopped fine
A Tbsp or two of mayo depending on how mayonaisey you want it
Juice of 1/2 lime
1/2 tsp hot sauce like Crystal, more if you want, or you can use Tabasco or your favorite hot sauce
Salt and pepper to taste

Directions
Roughly mash avocado and add lime juice, stir in rest of ingredients, cover, let sit covered for at least 30 minutes to meld. Taste, adjust seasonings.
 
All this but no mayo please, for me. And I will use rascal's excellent chilli sauce which he posted to me all the way from New Zealand. :)

The average "guacamole" in Finnish households is mashed avocado with a pinch of salt and a dollop of lemon or lime juice. That's what I've been making, too (of course I've seen the original recipes in cook books and online and there are a dozen of canned guacamoles in the Tex Mex sections of supermarkets). I just prefer fresh ingredients - and I'm the lazy sort. I guess it's time to evolve. Thanks, CraigC for sharing your recipe.
 
You don't use much, as the recipe notes. You really don't even know it's there.
 
You could probably use sour cream, plain yogurt or creme, but you might have to adjust the salt a bit.
