I had quite a few leftover vegetables on Christmas Day - sprouts, cauliflower, cabbage, broccoli, green beans, sweet potato mash and roast potatoes, as well as some stuffing. I don't like waste, so I mashed it all together, then sauteed some bacon lardons and onions in some olive oil. Added the gammon stock and some tomato puree, and cooked it for around an hour. The result was a beautiful soup that smelled so good as it was cooking the neighbours asked for the recipe!
