Natural mustard

I am a big fan of mustard. I simply love the tangy taste and enjoy making it myself at home. I buy organic mustard seeds in the health food store and grind them into a paste. Then I add apple cider vinegar, salt, paprika and turmeric to intensify that beautiful yellow colour. I feel my mouth watering as soon as I visualise the smell of it. :)
Have you ever created your own mustard, and what kind of vinegar did you use? Did you incorporate sugar in your recipe?
 
The mustard I buy in jars contains whole mustard seeds. If I bought some mustard seeds I would use the same ingredients that you suggest to make my own wholegrain mustard. I would not add any sugar. Apple cider vinegar should give it enough sweetness. If using another type of vinegar I would suggest adding a little brown sugar, which would make the mustard slightly darker.
