Ingredients:
4 medium lemons, and enough Seville (bitter) oranges to make up 2kgs (4.4 lbs) in weight
4 kgs (8.8 kgs) sugar
3.3 lts (7 pints) boiling water

- Clean the fruit with a brush to remove any dirt, dust, etc.
- Put the fruit in a large pot with the boiling water. Bring back to a boil, then put the lid on the pot and cook on low for about 2 hours, or until the peel is very soft . You can test this with a toothpick.
- Put the lid back on the pot and allow to cool for 24 hours. If you're currently in the USA or Canada, leave outside for about 5 minutes.
- The following day, remove the oranges and lemons, but leave the cooking liquid. Cut the fruit into 4 pieces and remove the pips. Separate the fruit from the peel. (Fingers are easiest). Avoid the white pith. Cut the fruit into small pieces and set aside.
- Add the pips (plus any bits of skin around the fruit) to the cooking liquid and boil for 5 minutes. Strain the resulting liquid and pour it back into the pot. Add the fruit.
- Gently scrape any white pith from the peel and cut the peel into thin slices. add this to the pot.
- Add the sugar and cook gently until the sugar has dissolved.
- Once the sugar has dissolved, turn up the heat to maximum and boil for anything between 5 - 15 minutes; until the marmalade has thickened. How do you know if it has thickened? Put a saucer in the freezer for 5 minutes, then remove it and put a tbsp of the marmalade on it. Leave for a minute or two, then gently tip the saucer to one side. If the marmalade runs, it's not ready. If it moves very slowly, it's ready.
- Pour the marmalade into sterilised jars, seal and store.
NOTES:
For this amount of fruit, you'll get approximately 15 300cc (10 fl oz) jars.
If you want to make lemon marmalade, then sub the oranges for lemons. The difference is that lemons have thicker pith, so you may need a teaspoon to scrape off the pith before cutting the peel.
If you can't find Seville (bitter) oranges, then use normal oranges and lower the amount of sugar by 10%
The final boil depends a lot on (a) your cooker, whether it's gas or electric, and (b) whether you're at sea level or way higher up. Higher up, it takes a little longer.
