This is a lot like pesto, but with a little sweetness from orange juice and zest.
Ingredients
One big handful of fresh basil (@2cups)
2 cloves of garlic, crushed.
Zest and juice of one average orange (no seeds)
1/5 cup of Parmigiano-Reggiano
@ a cup of EVOO (more or less until consistency is right.
Pecans (or favorite nut to taste)
Salt and pepper to taste.
Instructions
Add everything except the EVOO, salt and pepper to a food processor (I used my Cuisinart Mini-Chopper). Pulse it to a fine chop.
Slowly add EVOO as you pulse until you like the consistency. This is the time to add salt and pepper to taste.
I served mine on penne pasta, garnished with a little more parm/reg and fresh black pepper.
