I have two main go to substitutes for traditional pasta. One of them is store bought green or black bean pasta. The only two ingredients are black/green bean flour and water. It cooks like fresh pasta and the texture and taste are as close as you can get. It is super filling so you don't eat as much as you usually would.

When I am more broke and can't afford that, I like to use a julienne peeler on a zucchini and use that as pasta. I don't really cook it as the hot sauce will do it enough. It is delicious!

What do you use instead of pasta?

I have used store bought spinach pasta and also do as you do with the Zucchini but I saute the zucchini "pasta" before adding sauce. I think I would like any type of vegetable/squash used in place of pasta but Zuccini works great with tomato sauces as far as the whole household enjoying it.
