Pavlova?

Long story short - a few years back I had to go bacvk to Australia for my mothers funeral and took my wife with me (of course). Anyway, we stayed with family friends and on our second or third night with them they invited friends over for dinner a beer or two. So one of these friends brought with her a home made Pavlova and it was unbelievable! Unfortunately, my wife had never heard of these Pavlova things, tasted it and absolutely loved it. Ever since, I have been trying to find a genuine Aussie recipe (or any recipe really I suppose) to give making one a try. That being said I have been told that they aren't the easiest thing in the world to make ....

Seriously, where do you begin? I know they are basically egg white but there has to be more to them than that surely?
No, not really. Egg white, sugar (powdered/ icing sugar is best) a little cornflour (corn starch in the USA) and that's it. I add a little vanilla essence and that's all there is to it other than finding s use for the egg yolks, (homemade egg nog).

That sounds very easy - so all you do is beat the egg whites till they become stiff, fill the hollow with whatever, sticvk it in the fridge to cool and Bobs your uncle?

I geuss the amount of sugar and corn flour is a matter of taste, or is there a required amount?
