Recipe Peach Achiote Paste

Peach Achiote Paste:

NOTE: Achiote paste is a preparation which may be used as a run on meats.

NOTE: Normally, an achiote paste uses bitter orange juice, but this one uses peach, sun dried tomato and balsamic vinegar.

Ingredients:

1) Garlic, crushed - 3 to 4 tspns.
2) Annato - 1/8 cup
3) Cilantro - 2 tspns.
4) Oregano - 2 tspns.
5) Paprika - 1 tspn.
6) Black peppercorns - 1 tspn.
7) Cloves - 1 tspn.
8) Lime juice - 1/4 cup
9) Peach - 1/2
10) Sun dried tomato - 2 tspns.
11) Adobo - 1 tspn.
12) Balsamic vinegar - 2 tblspns.


Procedure:

1) Dice up the peach.
2) Grind the peppercorns and annato using mortar and pestle.
3) Place all ingredients in a blender and blend.
4) Bottle the resulting paste and store for later use.

I'm really beginning to like, appreciate and hang 10 on spice blends. This is my third blend, the others being the Berbere spice mix and the Spice Islands mash and coulis.

BTW: Hang 10 is a surfer term meaning to ride a surf board with all ten toes curled over the front edge of the surf board. And no, I have never surfed in my life and so I use the term here to imply a sense of perfecting a technique. I've never caught a tube either.
