I normally make a pizza base with 40g of oats and 160g of wholewheat bread flour.
If I want to make pizza base with quinoa flour rather than wholewheat flour, are there any pitfalls of which I should be aware?
What would be the equivalent of quinoa flour?
Does quinoa flour react to yeast in a similar manner to wholewheat flour?

Agree with GH - give it a go and let us know how it turns out.
Personally, I wouldn´t do it because I´m perfectly happy with my boring old flour-based pizza, but you obviously like quinoa, so go for it.

On Passover, I can't have anything with wheat. I had some quinoa flour and almond flour left over from a carrot cake. I used 125g of quinoa flour, 25g of almond flour, just under a tsp of salt. Put it in the oven at max temperature for 10 minutes. Add cheese and tomato sauce. If felt strange as there was no yeast to make it rise and no gluten to help it stretch. However, it tasted nice and left me feeling full. Interestingly, it took some time before I realised how full I was. My mum had a little bit and she liked it too.
