Plans for today (2025)

My problem is, the neighbor gives me loads of them, and MrsT doesn’t like them. I like them fine, but it’s hard to figure out what to do with bags and bags of them. I can pickle only so many. I have enough of the things to last me 3-4 years.

Sounds like my cayennes this year. I've delegated half of the vegetable crisper drawer to Cayenne chili's, that's like a grocery sack worth, and am confident I'll have them until harvest next year. I eat a couple a day and the only thing they do in the fridge is dry out. No chili's no problem.

I freeze my chillies whole. I then just pull them out as needed and chop after 10 minutes or so. Works really well.

I've mostly given up freezing them as there are plenty frozen ones as well.
I use what's there, dry some and make powder*, and make sambal and other chili pastes

*Don't open your coffee grinder straight after grinding
