I took out a pork tenderloin package (2 tenderloins per package) from the freezer (thanks for the reminder, Barriehie). Awhile back a local grocery store had a sale on pork tenderloins for $1.99 lb and I bought a bunch of them, this is the last of them. making Iowa State Fair sandwiches tonight for dinner on slider sized brioche buns. I will have a lot of meat, so will likely only cook on of them and will save the rest for a fried rice with pork tenderloin and veggies.
Oh and two days ago I moved the last of the stuff from my garage chest freezer into the garage refrigerator freezer (the one that used to be in our kitchen before we got the new fridge). That chest freezer is now turned off and has been wiped out. I found a beef brisket with the spices for corning it that I put in the refrigerator for a slow thaw. My plan is to corn it and then make sauerkraut balls. These are an Akron, OH originated thing that have spread out a bit over the years. I had never heard of them until I moved here. There are a variety ways people make them, but mine have corned beef, sauerkraut, cream cheese, and herbs, which I then roll into balls, roll in flour, dip into an eggwash mixture, then roll into Panko bread crumbs (then fried or frozen until ready for frying). My DH loves these things. I don't like them unless I am the one making them, usually people put too much sauerkraut in them and not enough meat.
Drinking tea right now and cleaning out my desk. I got my filing cabinets and office storage cabinets cleaned so this is the last thing to do in my office to get it right so I can clutter it all up again!
