badjak 's about rightMake some pasta dough. There are about a zillion recipes out there and I found this one but it seems like a lot of eggs! I can see where using 00 flour could require more liquid but this seems excessive. Prior, like years ago, I just used a cup of AP and an egg and it worked. Now I'm retired and can be more discerning and thoughtful with these things.View attachment 143483

Thank you. I'll go with using the eggs since I use them so rarely! I dare not look at the date...Actually your old formula of 1 egg to 1c/120 -130g ish or so flour is pretty ok tho of course you can tweak with added yolks, evoo etc.
I also sometimes use an eggless version - taken from Maggie Zhu at omnivorescookbook for dumpling wrappers
