Preparing for Christmas

This year Iā€™m only cooking turkey to ensure the standard cold cuts are available the next day.
Usually I invest a lot of time and effort into making sure my turkey is just right but that is partially so the aesthetics when itā€™s brought to the table gets the ā€œoohā€ without compromising the taste and texture.

As it is for cold cuts and no one will be eating the skin Iā€™m considering keeping it ultra moist by tenting it in a tight foil construction and painting the skin with something to akin to gravy browning to stop it being terrifyingly white.

So this is the first youtube suggestion. I find him slightly irritating and it was too involved for me to bother with for cold cuts (but I did like his little quip at the end), what do you think? Have you ever painted the skin? Are you an avid streaky bacon crisscrosser? Do you protect parts with foil or do you blast the skin into crispy submission at the end?

Thats what I was thinking, you get beef AND turkey wrapped in bacon AND a bottle of wine thrown in, with all the veg prep done. Bargain.
Yep, last year the roulade did us two puddings, and there was enough veg left to do bubble and squeak on Boxing day. For the main meal I spent less than an hour in the kitchen, and the quality is excellent.
Winner, winner, Christmas dinner!
