This is a really quick side dish, that comes together in just a few minutes with some instant rice, spicy tomato sauce, chicken stock and veggies.
I'm becoming more and more of a fan of El Pato brand tomato sauce. It's not your stander tomato sauce, but rather a spicy tomato sauce. I believe Goya brand also makes a similar product.
Prepare the instant rice according to it's microwave directions, substituting half of the liquid with chicken stock and the other half with the El Pato sauce. I like to throw in some frozen peas and corn as well for color. Then add a tsp of olive oil and a few splashes of lime juice, mix together and microwave per package directions.
If I have some fresh green onions around, I will top it with those as well.
