Recipe Real Chicken Soup

Ingredients:
4 boneless chicken breasts
4 chicken bouillon cubes
2 stalks celery
1 onion
1 pound carrots
8 oz. bag Egg Noodles
saltine crackers
salt and pepper as desired

Instructions:
Start 1/2 gallon of water heating ( 8 cups )
Cut celery, carrots, and onion into small pieces.
Cut chicken into 1/2 to 1 inch chunks.
Add all ingredients, except noodles, to water.
Bring to a boil and simmer for 20 minutes.

Add noodles and simmer for 10 minutes or until noodles are soft.

Add salt, pepper, and crackers as individuals desire.

Serves about 8
 
I love making chicken soup from scratch - to me it's one of the best comfort foods out there. What's better in winter or when you're feeling under the weather than chicken soup?! I would venture to say not much is better than that!

Also I love that for a from scratch recipe it's manageable. Simplicity at its' best.
 
Well, real chicken soup is cure for common colds, so that tradition says. My mother would cook chicken soup when we have colds particularly during the rainy season. I remember sipping the steaming soup that would unclog my nose and clear my throat. And after finishing a cup of that chicken soup, I would perspire and later on would change clothes and feel better. But our chicken soup of yore had that fine Chinese noodle called sotanghon.
