Simply make a Red Velvet cake as you normally would, according to the directions on the box. Cook normally, and allow cake to cool.
Then, take a small piece of the cake in your hand and make a fist, squeezing cake together into a bonbon sized ball and place on a tray covered in wax paper. repeat until you have desired number of bonbons. Freeze for one hour.
Next, melt a bag of white chocolate chips (any brand will work) in the microwave until smooth, usually 2-3 minutes, stirring every 30 seconds to prevent chocolate burning.
Remove red velvet balls from freezer, and pick them up one at a time by sticking a toothpick in the center and lifting at an angle (so it doesn't slip off of toothpick. Dip cake-ball into white chocolate, shake off any excess chocolate, and replace onto wax paper for chocolate to harden.
After all cake-balls are dipped, keep refrigerated until eating. Bon appetite!
