It started out as this. I used fennel seed, black pepper, microplaned garlic, salt, lemon zest, rosemary and thyme as seasonings for the inside of the roll. Outside was seasoned with a mix of salt and baking powder, plus residual on the board of the inside cure. Spent the night in the refrigerator.

I forgot I also added some red pepper flakes. My taste buds informed me quite vocally about that. I may have been a bit heavy handed with them.
