I posted this recipe a few months back so I don't know whether it's valid for the Pineapple Challenge. I haven't tagged it yet, but if it's ok, then great.
This is really divine, refreshing, and unusual. Cucumber with fruit and fish sauce? Well why not! It's great with grilled chicken or pork, or chicken/pork curries.

I don't see why not. You'll get the tartness from the apples (a a bit from the tomatillos) and the dressing will do the rest. Go for it.
