I would think that maybe you just got a Sherry that was not to your liking. Maybe it was too dry tasting, or maybe it just wasn't to your taste buds. Maybe you didn't cook off the alcohol enough, and the taste for that amount used was overwhelming? I have used Sherry when I do my gourmet green bean casserole, and while it's not a "necessity", I definitely think it helps and gives the final dish some "zip". Some people are sensitive to certain things (like salt). What is normal for some may be too much for you. Personally, I love vinegar. I sometimes take straight-up swigs of apple cider vinegar.
