Recipe Shrimp & Cabbage Stir-Fry

INGREDIENTS
  • 2 Tbsp dried shrimp soaked for half an hour, discard water
  • 3-5 slices ginger
  • 2 cloves garlic sliced
  • 1 medium spring onion/scallion sliced
  • 1/2 of that Napa cabbage, chopped
  • crisp fried onions to garnish
  • Sauce:
    • 1 tbsp oyster sauce
    • 1 tbsp light soy

METHOD
  1. Heat a wok on high with 2 tbsp oil, chuck in the prawns, ginger, garlic and stir fry for about 30 seconds
  2. Toss in the scallions, fry another 30 seconds
  3. add in the cabbage and stir it around a bit to get oil over it, fry about a minute to wilt it
  4. throw in the oyster sauce and light soy and stir fry another 1-2 mins or so
  5. transfer to a plate and garnish

For other sauce options you can use black bean sauce or yellow bean sauce.
You could also throw in 1 tbsp of XO sauce or Sichaun Fermented chilli beans at the start too if you wanted some kick.
Many possibilities. Bit of Chinese waxed ham is a common addition or large fresh shrimp. Shiitakes (yech), bell pepper...
