i saw a chap in the woods yesterday with a tube coming from the trunk of Tree ,on questioning him he was collecting the sap for health reasons ,March is probably the best time to do this as the sap is rising

It can also be made into wine. I thing it was one of the Russian tsars who made a habit of drinking birch sap wine [and quite nice it can be too].
