Recipe & Video Simple Smash Burger on cast iron

Ingredients (for 1 burger) :
- 150 gr ground beef (20% fat)
- burger buns (ideally brioche)
- cheddar cheese ( I'd prefer good quality American cheddar)
- onions
- salt and black pepper for seasoning (optional)
For the sauce: - 1 part mayo - 1 part ketchup - 1 part dijon mustard - 1/2 part extra hot tabasco sauce - 1/2 part Worcestershire sauce
(you can adjust according to your taste)

First we are mixing our sauce as per the above.
Make two patty balls of each approx. 75 g. No seasoning yet, we will do it while grilling them.

Once we have our grill ready (you can also use the stove, but the fire needs to be really strong to have the same effect), place the cast iron pan and wait until is blazing hot. Add some butter and toast the buns.

Place the burger patties (balls) a little bit apart from each other and press & smash them to 1/2cm thickness.
Also start sauteing the onions.

Flip them once the bottom is seared and the cheddar. Meanwhile prepare your buns by generously applying the sauce.
