Nothing fancy; I figured though when I posted this would be right up your alley! Smoked ham is a regular ham that's mostly cooked first then smoked the last hour and a half or so. How long you smoke it is for your depth of flavor. The aubergine is peeled, sliced thick around 6 or 8 mm, then mixed with diced chili's and smoked/roasted alongside the ham. Do you have a smoker?

I know you have a fire pit and it wouldn't take much more than a box to make a smoker. Water soaked wood chips on your coals, food to be smoked on a grate, cover with the box...

I got a weber smokey mountain, a stove top smoker (cadac) and a cold smoke generator with several types of wood dust

When I need smoked aubergine ( or any other vegetables) I put them in my cast iron frying pan. Once I've heated up the pan, I thrown in a couple of mango twigs (or any other fruit twigs I can get hold of) and cover with foil. Once the smoke starts. I put the veg in.
20 minutes later, smoked veg.

That sounds easy, but also very similar to my cooktop smoker.
Do you cut the veg or keep whole?
