Sourdough starter

So ingredients
90 g rye starter (she doesnt specify, lets assume 100% hydration - 45 g rye flour/45 g water)
45 g oats
90 g whole wheat
270 bread
315 water

Total water 45 + 315

Oats want 100% hydration so you need 45 g water for them alone.

Remaining 405 other flours and 315 water - gives 78% hydration.
Its what the recipe also states.
78% gives a wet dough and can be difficult to work with, but is doable

Total of flours incl oats is 450 gr.
General rule is 2% salt which is 9 gr.
She uses 11 gr. It's fine, you can go up to 2.5%, but personally I would lower it to 9.

Basicaly, go ahead and bake :)
Well actually she does explain a starter feeding schedule that's 100%, but the issue is with the oats. I have quick oats that are much lighter weight and they soak up more moisture than rolled oats. She's using rolled oats. I have quick oats on hand, not rolled oats. So if I use quick oats, I am going to have a much larger volume of oats at 45g so the bread is going to be too oat heavy. I have to figure that out because I don't want it to be mostly oats in the bread.

No worries, I'll figure it out by the time I'm ready to bake, which isn't today. Thank you anyway!

Water : use the amount stated minus 45 gr.
Add oats in the amount you think is nice, and an equal amount of water.

So lets say you want to use 25 gr oats.
Go ahead and change water to 315 minus 45 plus 25

The oats are a small amount and hydration of the dough is high so there will be plenty liquid

Yeah, my problem is that I am not sure how much the volume of 45g of rolled oats is because I don't use rolled oats in anything (and when I have it was so very long ago I can't remember). If I had some on hand so I could measure out the weight of 45g into cups it would help...LOL! I think that using quick oats it could be double or more in volume for the same weight of 45g because they are so light in weight due to ultra processing.

I am going to do some research online and see if I can find out more information. I do appreciate your input very much, thank you.
