I lost count of how many 'spaetzle makers' I tried - they all failed, some more miserably than others....
once upon an episode Emeril used one of the below - it is the absolute best for cheese doodle style.

I’ve watched few youtube ‘how to’ vids by proper German spätzle makers and they all use flour. Plain (all purpose) flour.Next time I'm at Dollar Tree I'm going to get one of their cheapy cutting boards and give it a shot like in the video.The recipes I'm finding say to use flour but I know from making potato dumplings when I used flour they fell apart in the water. The only thing that worked with the dumplings was using potato starch.

They said you can buy spaetzle flour in Germany which is mainly plain flour with a bit of semolina in it.
The box spaetzle makers are only £12 here or the round flat dish version about £20.
Had a look on the US amazon and the box one is about the same in dollars but the round flat dish version you can get for $13.99
